There’s nothing better than homemade sausage rolls, and these homemade Caramelised Apple and Fennel Pork Sausage Rolls are so tasty I bet you can’t just eat one! Sausage rolls are popular all year round here in Australia, especially as a casual snack at a party due to their quick and easy to make reputation.

In recent years sausage rolls have got somewhat of a bad name, due to the mass produced versions you find in supermarkets with zero flavour and zero nutrition. As with most things when making your own sausage rolls, using high-quality ingredients returns this classic to their flavoursome best.

The sweet caramelised apple and fennel spice, mixed with pork – combines to give a sweet, juicy, slightly spicy pork filling that’s wrapped in a buttery, flaky puff pastry goodness. It’s the small touches that make this recipe great, caramelising the apple takes these sausage rolls to a whole new level, which is bordering on gourmet.

If you have time you can make these sausage rolls with homemade puff pastry, instead of store bought, but as we were short on time we went with store bought puff pastry.

We like to serve our homemade Caramelised Apple and Fennel Pork Sausage Rolls with Beerenberg Tomato Chutney a gourmet chutney we discovered when in South Australia.  If you have time making some from scratch is also an option, but to be honest you can eat them without any kind of dipping sauce. Too much sauce can take away from the delicious apple, fennel and pork filling.

Ingredients
Caramelised Apple
  • 2 tbsp butter
  • 1 granny smith apple, finely diced
  • 1 small brown onion, finely diced
  • 2 tbsp brown sugar
  • 2 tbsp apple cider
  • ¼ tsp salt
Sausage Rolls
  • 500g pork mince
  • Caramelised apple
  • 2 large cloves of garlic, chopped finely
  • 1 tsp dried thyme
  • 2 tsp ground fennel seeds
  • 1 cup fresh bread crumbs
  • 1 egg
  • salt and pepper
  • 2 sheets of frozen puff pastry (9 x 9 inches)
To finish
  • 1 egg - for egg wash
  • Sea salt flakes
  • poppy seeds
Instructions
  1. Heat 2 tbsp of butter in a nonstick pan. When melted, add the onions and apple and saute over medium heat until the mixture starts to turn golden brown, about 10 minutes.
  2. Add the brown sugar, apple cider and salt and cook for another 5-10 minutes until the liquid is reduced and the apples have caramelised. Set aside to cool slightly.
  3. Preheat oven to 180°C. Line a baking tray with baking paper.
  4. In a bowl, place the pork mince, breadcrumbs, garlic, herbs, egg then add the cooled caramelised apple mixture and salt and pepper to season. Mix with your hands or a spoon, until everything is mixed through well. Divide the mix into four portions.
  5. Place one puff pastry sheet on your bench and cut it in half, so you have two 9 x 4.5 inch rectangles. Take a single portion of the sausage filling and while leaving a 1 cm margin, place the filling along one long edge of the puff pastry rectangle, evenly. Brush both long edges with some egg wash, and carefully roll up the pastry sheet with the sausage filling, until the ends overlap by about 1 cm. Gently pinch the two ends together to create a seal. Place the seam side down, and cut this roll into 4 equal parts (with a back and forth motion using a serrated knife so that you cut evenly and smoothly). Place the 4 sausage rolls on the baking tray, slightly apart.
  6. Repeat with the remaining puff pastry sheet to make 16 sausage rolls in total.
  7. Using a small sharp knife, make two slits on the top of each sausage roll. Brush the tops generously with egg wash and sprinkle some salt and poppy seeds (optional).
  8. Bake in the oven for 15 minutes, and then increase the heat to 190°C and bake for a further 30 minutes or until they are golden brown.
  9. Take out of the oven, allow them to rest for a few minutes, and serve while warm.

 

Banana pineapple smoothie recipe

As many readers would know Sunday is market day for Brooke and I. Each Sunday we venture to South Melbourne markets to do the weekly grocery shop. Brooke is a woman on a mission when doing the grocery shop, methodically checking the items off the list, whereas I’m frequently straying from the plan. This Sunday Brooke turned around to see me holding not one but 2 whole pineapples (which, were not on the list). Pre-empting the question coming my way I said, “I’m going to make a banana pineapple smoothie”.

On the ride home, I now needed to back that audacious statement up so I Googled healthy banana pineapple smoothie recipe. To my surprise, I couldn’t find any, which appealed so I decided to make a hybrid of a couple I had read.

This is a quick and tasty way to start your morning. Simply combine your 4 ingredients, fresh pineapple, half a banana, half a cup of Greek yogurt, and 1 cup of Almond coconut milk (either plain almond or coconut milk will also work). Add half a cup of ice and blend for 60 seconds and your tropical banana pineapple smoothie is ready to drink.

  • 1 cup frozen pineapple
  • ½ medium banana
  • ½ cup crushed ice

  1. Add fresh pineapple, banana, Greek yogurt and ice to the blender. Add 1 cup of the almond and coconut milk. Pulse until mixture is smooth. Pour into a glass and drink your refreshing tropical smoothie!

As regular readers of the blog would know, a salad is a rare sighting around these parts. Now it’s not that we don’t make a lot of salads, more the fact that wise man once said “you don’t win friends with salad”. Whilst salads in many instances can become merely a garnish to the main event, this roasted pumpkin and feta salad is certainly an exception. Roasted pumpkin and feta are just two of the star players, which are joined by beetroot (an Australian favourite) and avocado and also fresh baby spinach leaves.

This roasted pumpkin and feta salad is our go-to salad recipe for BBQ catch-ups and family gatherings when asked to bring a salad. Always a crowd pleaser it’s both quick and easy, which is perfect when your ready to get your party pants on.

While a salad is a rare sighting on the blog there are a couple of other salads if your on the hook to bring more than one to an event, this apricot and couscous salad is a great option as is our simple potato salad.

  • 300g baby spinach leaves
  • 1 avocado
  • 125g danish feta
  • 5 baby beetroots quatered
  • 400g butternut pumpkin
Instructions
  1. Preheat oven to 220C. Line a baking tray with non-stick baking paper.
  2. Place the pumpkin in a large bowl. Drizzle with oil. Season with fresh garlic salt and pepper. Gently toss until the pumpkin is well coated. Place in a single layer on the lined tray. Bake, turning once during cooking, for 25 minutes or until golden brown. Remove from oven and set aside for 30 minutes to cool.
  3. Place the spinach on a large serving dish add the avocado. Gently toss until just combined. Add the pumpkin and beetroot and gently until just combined, finishing with a layer of Danish feta.
  4. Drizzle with olive oil and balsamic vinegar to serve.

 

Simple Gingerbread Cookies

In our house, Christmas time is all about the baking. Brooke baking and me eating, that is. It’s a great balance! Although we have a few “go to” recipes this time of year; Cranberry and Pistachio Biscotti, Apricot Balls and of course Choc Mint Fudge! You cannot go past a Christmas classic like Gingerbread. These simple gingerbread cookies are really easy to make and they turn out perfect every time. The dough can also be rolled and cut into any shape which makes it a great activity for those who have kids.

Like a true Australian, this recipe for Gingerbread cookies uses golden syrup, not molasses which is commonly used in all American recipes. You start with butter, brown sugar and golden syrup melting in a pot then incorporating the flour, egg and spices! When we make anything with spice (like our Ginger Nut Biscuits) we like a lot of flavour. For our spice combination, we used ground ginger, cinnamon, nutmeg and ground cloves, which will leave your house filled with the smell of Christmas once you’re done.

The most important steps to remember when making these biscuits is you must allow enough time for the dough to chill. This will stop the shapes from shrinking when you bake them. For those who are time poor (or impatient like Brooke) I would suggest you portion the dough into quarters and wrap each quarter separately allowing it to chill faster. The other tip is ensuring you get the perfect colour on your shapes. To avoid over browning, remove the gingerbread from the oven when it is a light golden colour. The biscuits may look soft, but they will firm up once cooled.

Once you have your biscuits ready to bake, place the cut-out dough onto a lined baking sheet. They won’t really spread (if chilled properly). They should take about 10-12 minutes in the oven for smaller shapes or 12-15 minutes for larger shapes, or until golden brown. Set aside trays to completely cool before decorating with royal icing.

Royal icing sets hard making it perfect for icing cookies, biscuits and for adding a decorative touch to your gingerbread men, Christmas trees or stars!

Gingerbread Cookies
  • 150g butter, softened
  • ½ cup brown sugar
  • ½ cup golden syrup
  • 1 Egg
  • 3 cups plain flour, sifted
  • 1 tbs ground ginger
  • 1 tsp ground cinnamon
  • ½ tsp group nutmeg
  • ¼ tsp ground cloves
Royal Icing
  • 1½ cups pure icing sugar, sifted (see note)
  • 1 eggwhite
  • ½ teaspoon lemon juice
Instructions
Gingerbread cookies
  1. Preheat oven to 180ºC. Line baking tray with baking paper.
  2. Melt butter, sugar and golden syrup together in a saucepan, stirring until smooth. Cool slightly. Transfer the butter mixture to a medium bowl. Add the egg and whisk to combine. Stir in the sifted flour and spices. Turn onto slightly floured surface and knead until smooth. Divide the dough into quarters, wrap with plastic and place in the fridge for at least 30 mins or until firm.
  3. Roll each portion out onto a lightly floured surface (or between two sheets of baking paper) to a 3mm thick disc. Cut out your desired shapes. Place onto the lined trays. Bake for 10-12 mins for smaller shapes or 12-15 mins for larger shapes, or until light golden. Set aside on trays to cool completely.
  4. To decorate, prepare royal icing and decorate your shapes for a festive touch.
Royal Icing
  1. Lightly whisk eggwhite and lemon juice together in a bowl. Gradually add icing sugar, whisking until smooth and combined.
Notes
Divide your icing adding a few drops of colouring if you wish to decorate your gingerbread with a few colours!

 

Grilled Peaches with Ricotta and Balsamic Glaze

I love stone fruit season and this summer has brought an abundance of local ripe peaches. Brooke is partial to a white peach, while my preference is a yellow peach so we decided to just buy some of each. I’ve got to admit that I had never thought to grill peaches, but when Brooke and I tried some grilled peaches at The Queen Victoria night market they were so good Brooke decided to give them a try at home. These grilled peaches with ricotta and balsamic are simple to prepare and they also look great!

Grilled peaches make an excellent dessert to serve at dinner parties because they are so quick and easy, giving the chef ample time enjoy a wine or two. Topped with fresh creamy ricotta cheese and a drizzling of a balsamic glaze, you will feel spoiled but appreciate how fresh and healthy this dessert is.

Ingredients
  • 3 ripe peaches, halved with pits removed
  • 1 cup fresh ricotta cheese whipped
  • ¼ cup balsamic vinegar glaze
  • fresh mint
Instructions
  1. Lightly olive oil a grill pan and heat on med-high. When the grill is nice and hot, grill each half peach for 4-5 minutes per side.
  2. Placed peaches on a plate with cut side facing up.
  3. Lightly whip your ricotta in a bowl to make the texture light and fluffy.
  4. Place a dollop of approximately 2 tablespoons of fresh ricotta cheese in the center of each peach half and drizzle with balsamic glaze.
  5. Top each peach half with mint.
